The One & Only: Lily's Coconut Chocolate Bar

Oh my _______ (complete the sentence with your imagination). I just found the best thing to hit this planet...or at least for the chocolate lovers and sugar avoiders of the world. So, I was having this insane chocolate craving the other night, which is kind of out of character, and I ignored it and traded it for a greek yogurt with berries instead. BAD MOVE. Anyways, lucky me, I went out to dinner with an old friend and she introduced me to a new wonderful friend: Lily's Sweets Chocolate. Specifically, the coconut bar. This thing is FANTASTIC, is sweetened with stevia (yes, that means low/no sugar), has a short ingredient list, and, most importantly, does absolute wonders on the taste buds. I can proudly say that I satisfied my craving, exceeded my mind's expectations of what that would be like, and will be Lily's number one fan so long as I love chocolate. So for always. Here's to catching up with old friends!

{I got it at Whole Foods...I am sure any larger natural food market will have them!}

Cheese

It's a hot topic. Is cheese good? Is it fattening? Goat? Cow? Sheep? Here's my quickie on cheese right out of Whole Foods Market in Wellesley: cheese, like many other things, is fantastic...in small quantities! So take a bite, enjoy, and make sure to nibble on a flavor that is worth it for you! Don't worry about the calories etc. if you're not gobbling it down and truly enjoying it, it will not hurt you. My HerCampus Juicing Article - Extended Edition of Post!

Diets and Detoxes and Drinks, Oh My!

Posted Apr 14 2013 - 9:20pm
In light of the awful news and scandals about the obesity epidemic and the world falling off the “healthful” cliff, there has been a new emergence: juicing. Some do it for a detox, some do it to lose weight, others just want a change--and then there are the devoted veggie and fruit lovers (debatable). Regardless of the reason, this trend has hit hard, and it doesn’t seem to be going anywhere anytime soon.
There’s so much to be said about the benefits and the dangers of juicing. There are so many variations on “cleansing” that celebrities and health nuts seem to be endorsing or trying. There is, however, a slight caveat to this masterful plan: we eat and drink so many processed and unhealthy things that a once-in-a-while detox can’t possibly “fix” such a global problem. You might drop a few pounds for the upcoming date party, formal, or whatever else you’re trying to slim down for, but the long-term implications are unconvincing. That said, taking a break from beer and fries is definitely a step in the right direction. This topic shows us, once again, that the world of health can tend to be a grey area.
There are a couple of things we’d like to talk about regarding juices and detoxes: let’s discuss pros, cons, who’s juicing and who should be juicing, how to juice correctly, and, of course, a few juice recipes that we’ve tried (yup, if done correctly this stuff is great - we do it too!).
Why juice?
The truth is, there are tons of obscure diets/detoxes out there. We’ve got supplements, fasting, herbal remedies, juicing (duh), and so much more. Why follow these fads? Realistically and ideally, we should be able to eat right consistently, go outdoors regularly, and get our physical activity levels up to become perfect, healthy super-humans! Right? Too bad that seems far too daunting for so many of us. Fad trends like juicing are a result of natural spurts of motivation, commitment-phobia, and the urge, like everything else in American culture, to get it done and get it done fast (see what I did there?). So now that we’ve told you how we really feel, let’s shed some light on the benefits of throwing a bunch of veggies and fruits into a blender and mixing them up into deliciousness.
1)  As noted above, juice is tasty and quick (and not to mention very portable). It’s a fantastic way to get vitamins and minerals, especially with an on-the-go lifestyle. Ready, set, juice.
2)  The experience, if you incorporate it into your lifestyle, is unlike any other. There’s something of a juice cult out there. Walk into Nekter in Santa Monica, CA and you have entered a world of yogis/yoginis (male and female practitioners, respectively), bikini-ready beach-goers, stars, and people that seem just downright stoked about life. There's a reason they do it, whatever it is, and their sleek and zen vibes make you want to do it to.
3)  You get tons of fiber. Eating whole fruits and vegetables ensures that you consume enough fiber, which is important for weight management. Fiber both lowers insulin spikes triggered by all of the sugar in a fruit and simultaneously makes you feel fuller, longer. That smoothie sure sounds good, doesn’t it?
4)  It can help you reverse your bad habits. Companies like Nekter offer hardcore cleanse programs that involve buying carefully numbered bottles along with detailed instructions and guidelines on how to consume them. Some people really need these strict diet directions to avoid "cheating" and eating bad foods. This may just be one of the best solutions to encourage us to get the processed nastiness out of our diets, ditch the added sugars and syrups, and appreciate what nature gives us. Are we being too hopeful here?
Why not juice?
There are a few reasons: toxicity, too-quick weight loss leading to even-quicker weight gain, the potential of developing an eating disorder, not getting other necessary vitamins and macro-nutrients, tons of sugar, and ruining your social life (but actually)... among others. Stop right there with that blender, orange and kale, and read below.
1)  A number of those fancy juice companies are messing with your mind. They write all about the fruit and vegetables included in the bottle but leave the additional sugars and starches in small print. Read the backs of those bottles and be weary of those products that claim they're healthy versus the ones that actually are.
2)  Some of the fads suggest juice detoxes and cleanses as full replacements for all food. One meal a day is one thing (and we aren’t necessarily recommending that), but ditching all food for a cup-o-juice? Not the best idea in the long run. Your body was made to take in solid foods, and if you stop that, some things may go out of wack.
3)  Statistics show that when people see results, they want more. What does that mean if you get these results going from eating three square meals a day to just sipping on juice? It could encourage some people to stay on the “no-food” binge, which could lead to bad habits, battles with eating disorders and a skewed perception of the boundary between looking healthy and looking scary skinny.
4)  In nature, plants let out poison when they feel that they may be getting harmed or attacked. This doesn’t change in the human body. Going from a “normal” or “too-little” consumption of vegetables to an all-vegetable diet can, and often is, shocking to the body. It can cause an inflammatory response to the toxicity released by the veggies, which could lead to acne, stress, and other issues that aren’t fun to deal with. Consider these side effects, even if the trade-off is a rockin’ bod.
5)  This kind of detox is temporary. You can’t live on liquid fruits and vegetables for the rest of your life. If you’re oh-so-tempted to try it, go for it but know that it has to end at some point. Just remember that while it can help you restructure your eating habits and reevaluate your food choices, a lifelong state of detox isn’t the answer to a lifelong state of health.
Who’s juicing, should juice, & how do I do it correctly?
It seems like every celeb is doing some kind of detox – or at least talking about it in magazines. Notice, however, that you don’t hear about many athletes doing any sort of cleanse. Brides will do them in preparation for their upcoming big event, and teenage and college girls will follow the fad to get super-runway-skinny. These are not good ways to go about detoxing. Instead, if you are choosing to try out the trend, give these things some consideration:
1)  Try Kombucha. Don’t let the floating live cultures scare you away because this stuff is a miracle! Instead of skipping meals and supplementing with blended veggies, try complimenting your morning meal with this drink. It’ll cleanse you, give you natural energy, and it’s rich in probiotics. There’s a whole movement on this stuff right now because of what it can do for your body: weight management, digestive ease, clearer skin. Running to your nearest Whole Foods yet?
2)  Add juices and smoothies (no sugar or other processed evils added, obviously) into your regimen to compliment breakfast or lunch. Those are the best times to get a lot of vitamins and nutrients but, more importantly, the preferable time to eat sugar. In the evening, sugar (even natural) may give more of an intense insulin spike.
3)  The best advice we can give? Make it yourself. That way, you know exactly what you’re putting into that blender and into your body, and that is health rule #1.
Our favorites.
Our favorite detox-type foods include juices and smoothies made from fruit, vegetables, nut milks (yogurt-like consistency) and other natural ingredients. Try these options and pick wisely, depending on whether you’re in a veggie or fruit mood, and enjoy!
Nekter’s “The Greenie”: Parsley, spinach, kale, celery, cucumber, lemon and apple
It’s nutrient-rich, appetite-suppressant, and a just a little bit sweet thanks to the apple!
Nekter’s Acai Bowl: Acai, bananas, dates, peanut butter and raw vanilla bean cashew nut milk. Blend together and top with hemp seed granola and sliced bananas.
This one tastes like a little slice of paradise, not to mention you get a huge variety of nutrients and protein at the same time. What’s not to love?
Her Campus wishes you the best if you decide to add a little juice to your life. It can do a lot of good if done right. To read more about this writer's personal health thoughts and experiences, visit my blog at  http://bewellccs.blogspot.com/!

On Juicing and Nekter

I was just asked to write a story about the whole juicing and detox trend by my HerCampus editor and it got me thinking about a great new blog post! I was lucky to experience the best juices & smoothies in SoCal over Spring Break at a new juice-bar chain there called Nekter. [Yes, I am seriously hoping they bring this chain over to Atlanta and Boston and wherever I end up after school, ASAP].

They make their juices and smoothies from fruit, vegetables, and an awesome yogurt-like base made from the nut milk of a variety of nuts: almond, cashew, you name it. My favorite? Their Acai bowls. Served with granola and beautiful fresh fruit, neither my dad nor I could resist. It was the most incredible breakfast two days in a row.

I also tried their famous "The Greenie" veggie juice. This seems to be the popular option among the post-yoga-class customers. Here's are a couple of their recipes...make it at home, it's so easy and so dang good, without fail, every single time. Enjoy!

Atlanta's Hidden Gem

Who knew!? Atlanta has its very own, NYC-style sky line walk. Ok, maybe it's not quite the same as the loop up in the City, but New York might be getting a little bit of competition from this construction project. The BeltLine's got it all: from a nice wide walking/running/biking trail, to transportation stops, to greenery, they have got you covered. Oh, and how could I forget the King of Pops' appearance on those hot, sunny Atlanta days. Got some time on the weekend? Grab a friend (or two...or more) and take a walk on this lovely escape from the city's everyday hustle and bustle. It's better than studying...I swear....

Oh hey, King of Pops....yum...

Dessert Done Right

Have you ever wanted dessert so, so bad, and not eaten it (putting yourself under tremendous torture) because you want to fit into that bikini for formal or whatever you might need to look stellar for in the near future? It's fine, you can be honest, because I totally have. What did I do? I visited a blog that I take recipes from religiously @pbfingers. I found Julie's AMAZING almond butter granola recipe, made it, and put it on top of half a serving of vanilla goat yogurt. YUM. And healthy.

Here's how:

Body Image

Here's the newest story of mine for HerCampus - enjoy!

Boost Your Body Image: Looking, Feeling and Staying Healthy at Emory

Posted Mar 31 2013 - 8:42pm

We’ve all heard it before: “be yourself; everyone else is already taken” and “no one can make you feel inferior without your consent.” The question is, do we actually believe that? Do we act on it? Do we see ourselves as the best version of ourselves, or, better yet, anywhere near the way others view us? We hate to call you out, Emory, but there’s definitely some work left to be done to boost the body image on our campus. Good news is, there is a wide range for what is “normal” in terms of esteem and there is an even greater variety of things that can be done to maintain a healthy body and a positive body image. Keep on reading to let us tell you how!
First of all, what exactly is going on on campus? We hear about it all the time: this person broke up with that person and now that person thinks there’s something horribly wrong with them and spends hours upon hours at the gym. While that might be a little extreme, it’s not too far off from the reality.
Emory women are well dressed, fit, and beautiful. Now, THAT creates a lot of pressure. In a community that places value on being hot and credits everything that comes with that, how do we keep our cool? Do we lay out and tan for the upcoming event of the weekend or do we protect against skin cancer? Do we go on that fro-yo date or hit the gym instead? Do we want to look runway-skinny or do we workout to be strong and athletic? Our suggestion: find a balance.
Staying “normal” in a world where media and society fill our brains with images and news every second of the day can be difficult. Being grounded means filtering this information, and not taking too much of it to heart. This requires self-awareness and reflection, and can lead to the ability to enjoy life while maintaining good health and looking and feeling great. Keeping a great body image is about being healthy without getting obsessive.
Here’s the meat of it all: our (condensed) game-plan for how to maintain a healthy body image through all of the obstacles created by being this age and being in college can put up.
Step One: Nutrition
“You are what you eat.” Really, you are. What you put into your body plays a key role in how your body looks and how you feel. Food can definitely lure us in and trick us, keeping in mind a few important ideas, we won’t let that happen.
  1. Avoid overly salty/gassy foods before a big event. You will feel bloated and see somebody very different in that mirror. Spare yourself!
  2. Sugar is not your friend. Eating sugary foods boosts insulin, you might feel happy for a few minutes...and then you crash. (Alcohol has a similar effect...just saying.)
  3. Check out the new restaurants at Emory Point. All of them have a number of healthy options including fish, meats, and veggies that contain vitamins and minerals we definitely don’t get enough of.
  4. If you know you’ll be calling Dominos later in the night, make the conscious decision to have a healthier dinner and skip the Yogli this time around. Remember, balance is everything.
  5. Stock up on power foods during the week (spinach, proteins, fruit etc.) in preparation to let lose a little bit on the weekend. We aren’t saying you can’t have fun some of the time!
Step Two: Exercise
Like anything, the hardest thing about exercise is just starting it. But once you make it a regular occurrence by running or participating in sports teams, the hardest thing becomes stopping. At Emory, it is so easy to get in shape – you can join an intramural or club team, become a regular at the WoodPEC, or jog around the beautiful campus alone or with a workout buddy. The only thing stopping you from doing these things is yourself.
  1. If you don't have the willpower to stay on schedule with your workouts, find someone who does and workout together.
  2. Doing the same activity every single day can get repetitive and boring, so make a portfolio of exercises you like to do and switch things up throughout the week. Always be looking for new ways to work out, whether you search for different exercises online or get off campus to try a new type of class.
  3. Make sure you eat foods that fuel your energy and don’t make you feel like a blob – it’s much harder to run on a stomach full of fries than fruit!
  4. If you’re sick of starting over, stop quitting!
Step Three: Avoid Stress, Be Happy & Stay Confident
This is much easier said than done, but we have faith in you! Just make a few small changes in your day-to-day life and feel happier instantly.
  1. Surround yourself with the right people. The more negative energy there is around you, the more you will feed off of it. Try to avoid spending too much time with people who are constantly talking down about themselves and others and try to surround yourself with positive energy instead.
  2. You’ve heard it before, but: TIME MANAGEMENT. The more you stay on top of your to do’s and the more organized you stay, the better and less overwhelmed you’ll feel. Trust us.
  3. Make time for your friends and for yourself. Let yourself have a movie night or go out for a nice, sit-down meal. Being human and wanting to relax is okay every once in a while!
  4. Keep your chin up, even if there are days when you're not feeling your best. Confidence is the key to maintaining a healthy body image, and it'll keep you glowing from the inside out.
With these tips and tricks you should be well on your way to maintaining a normal and healthy body image. When you look in the mirror, be proud of what you see – and if it feels like you’re not, do something to change it in a healthy way. Don’t forget, you can’t be perfectly confident all of the time, and that is absolutely fine. There’s always room for self-improvement, as long as you’re not beating yourself up over little things. Appreciate your body for what it is by taking care of it and treating yourself well even if you’re working to change something small about it. Be sure that it’s you who wants to make these changes, though, and not just people around you. Keep these thoughts about body image in mind, and you can rest assured that you are working towards the right direction.
